摘要: Abstract Modified Atmosphere Packaging (MAP) is used commercially to extend the shelf life of strawberries. The attainment desired gas (O 2 , CO ) concentrations inside MAP relies on product respiration and mass transfer through packaging will affect quality. objective this work build a mathematical model for strawberries assess effect uncertainties headspace concentration quality: 1) cold chain related temperature relative humidity variations 2) variability associated quality based literature. Weight loss was more influenced by storage conditions (temperature RH) whereas spoilage had similar influence parameters. Waste generated in estimated from industrial standard weight thresholds. A sensitivity analysis stochastic showed input parameters pointing interventions reduction rate (e.g. modification packaging) water coating) may prove successful than other which waste generation not so sensitive to. As conclusion presents toolbox interpret data: develop models predict fate simulate allowing uncertainty 3) estimate kinetics criteria thresholds 4) perform identify most technological 5) that those
