Screening for quality indicators and phenolic compounds of biotechnological interest in honey samples from six species of stingless bees (Hymenoptera: Apidae)

摘要: Honey from stingless bees of the genus Melipona is a well sought product. Nevertheless lack legal frameworks for quality assessment complicates evaluation food safety and marketing these products. Seeking to assess honey this genus, physical chemical analyses, identification phenolic compounds, microbiological six species was performed. The samples showed high reducing sugars, low protein levels balanced microbiota. High total phenols flavonoids higher antioxidant activity were also recorded. Different compounds great biotechnological potential identified apigenin, kaempferol luteolin first time in honey. To best our knowledge, one few works describing detail characterization melipona together with significant therapeutic value.
