Study of Parasitic and Bacterial Infections in the Food-Handling Personnel, Ramadan, Iran

摘要: Background: Food-handling personnel play an important role in ensuring food safety throughout the chain of production, processing, storage and preparation. Mishandling disregard hygienic measures on their part may enable pathogens to come into contact with cause illness consumers. Occasionally, food-handling transfer that they are carrying or bodies . Methods: In order evaluate persons who was working handling processing centers, study carried out above-mentioned centers Ramadan west Iran. A total 938 stool samples collected were restaurants, confectionaries, milk products stores, Chelo-Kabab houses, sandwich shops etc. All examined by culture for entero-pathogens bacteria formalin-ether concentration technique ova parasites Results: 21 suspected that, finally 7 confirmed sere-typing identified. These Shigella boydii (5 samples) flexeneri (2 samples). Over 74% contained one species parasite. Entamoeba coli (45%) most common parasite followed Ascaris lumbricoides (39%), E histolytica (14.5%), Giardia lamblia (9%). Prevalence rate helminthes, pathogenic non-pathogenic protozoa 43%, 26%, 52.7% respectively.
