Angiotensin-converting enzyme-inhibitory activity in protein hydrolysates from normal and anthracnose disease-damaged Phaseolus vulgaris seeds.

摘要: BACKGROUND: Bean seeds are an inexpensive source of protein. Anthracnose disease caused by the fungus Colletotrichum lindemuthianum results in serious losses common bean (Phaseolus vulgaris L.) crops worldwide, affecting any above-ground plant part, and protein dysfunction, inducing synthesis proteins that allow plants to improve their stress tolerance. The aim this study was evaluate use beans damaged anthracnose as a peptides with angiotensin-converting enzyme (ACE-I)-inhibitory activity. RESULTS: Protein concentrates from spoiled regular controls were prepared alkaline extraction precipitation at isolelectric pH hydrolysed using Alcalase 2.4 L. hydrolysates had ACE-I-inhibitory activity (IC50 0.0191 mg mL−1) very similar those control terms ACE-I inhibition, peptide electrophoretic profile kinetics hydrolysis. Thus preparation affected would for revalorisation otherwise wasted product. CONCLUSION: present suggest seeds, e.g. anthracnose-damaged beans, alternative isolation be further introduced active ingredients functional foods. © 2012 Society Chemical Industry
