摘要: The present invention provides a method for the manufacture of fat replacement material suitable use in food products. comprises steps of: a) providing substantially homogeneous aqueous fluid containing albumin and at least one stabilizer selected from sugar salt; b) subjecting to controlled heat treatment temperature period time not less greater than that sufficient obtaining 50 100% denaturation albumin; c) spray drying treated fluid. also comprising dried powder an intimate admixture 1 part by weight 100 % denatured albumin, 3 parts salt. has excellent emulsifying properties as well improved stability resistance acid conditions.
