摘要: Aspergillus niger isolated from rotting cassava produced raw starch degrading amylase on cassava, maize, sorghum and soluble potato-derived as the sole carbon source without prior gelatinisation. Maximum activity of was attaired using substrate. The crude enzyme solution which comprised a mixture non digesting degraded both cereal tuber or root starches significantly. Source assay significantly influenced activity. Optimum pH for extracellular were 6.0 3.5-4.0, respectively. However, activities appeared to be uninfluenced across relatively broad range 3.0-7.0. No correlation found between capacity induce expression its susceptibility digestion. adsorbability various directly related their digestibility.
