摘要: Abstract Antioxidant activity in α- and β-chitosan at a wide range of molecular weight (Mw) chitosan concentration (CS) was determined by 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity, reducing ability, chelating hydroxyl activity. The form (FC) had significant ( P 50 ) than α-chitosan DPPH ability. 22–30 kDa showed significantly C ∗ the CS 4–10 mg/mL, forming entanglements. Reducing ability were more predominant action antioxidant as shown lower EC values those other measurements.
