摘要: Aims: Vineyards from early and late terroir were evaluated during ripening to determine optimal grape composition, with special emphasis on bunch uniformity. Methods results: Four treatments studied over three years : Carignan Grenache in two terroir, late. Samples divided into parts (top bottom half of the bunch) order berry weight, sugar content, titratable acidity, total extractable anthocyanins, phenols, seed maturity. The results showed uniformity Carignan. kinetics maturity generally a straight line pattern while it varied. For both cultivars, weight yield higher parcel, whereas anthocyanins more concentrated terroir. Conclusion: Pulp is less influenced by effect than phenolic Vintage or affect consistently Grenache. does not achieve complete ripeness mesoclimate. In warm years, grapes should be gathered as soon pulp reaches level because accumulation improve when harvest delayed beyond that point.Significance impact study: evaluation relation contributes defining ideal time optimizing winery management.
