Grape phenolics , which structurally diverse, therefore have a variable extraction potential (called extractability). This chapter discusses methods determining based anthocyanin from whole berries. First, description modifications done by different authors explained. Second, interpretation values indexes is exposed. Finally, effects environmental genetic factors content colour extractability commented.
