摘要: No information exists on the proanthocyanidin content of pear-jujube (Ziziphus jujuba Mill) fruit, their polymeric types and sizes, self-aggregation, or effect different water deficit levels during fruit maturation period these compounds. Two trimers, two tetramers, six B type procyanidin pentamers were identified quantified for first time. Water increased procyanidins low molecular mass, improving potential bioavailability possible physiological effects human health. The tendency to self-aggregate was similar in edible portion pit, not affected by deficit. from well watered trees domestic cold storage, whereas fruits suffering severe stress lost some content.
