摘要: Enzymatic hydrolysis can liberate bioactive peptides from protein materials, thus, pigeon pea was hydrolysed using thermoase. Crude hydrolysate (PPHT) subjected to ultrafiltration different molecular weight cutoffs collect 10 kDa peptide fractions. Fractions were analysed for in vitro antioxidative, antihypertensive, and antidiabetic properties. The fractions had stronger DPPH• scavenging renin inhibition when compared PPHT. In contrast, ACE the PPHT higher values. We conclude that could serve as potential ingredients formulate antihypertensive functional foods nutraceuticals. PRACTICAL APPLICATIONS: Oxidative stress promotes generation of free radicals, which have a significant impact pathogenesis human chronic diseases such cardiovascular impairment, cancer, diabetes. Peptides generated enzymatic proteins been identified impart beneficial health effects. this work, we showed thermoase digest well fractionated strong antioxidant properties addition exhibiting inhibitory activities against angiotensin converting enzyme, main therapeutic targets agents. products also inhibited α-amylase α-glucosidase activities, providing be used foods.
