摘要: The objective of this work was to evaluate the effects weather and soil type on physicochemical characteristics phenolic compounds 'Cabernet Sauvignon' grape (Vitis vinifera). experiment carried out in a vineyard established 2003, grafted onto 'Paulsen 1103', conducted cordon system. Two soils were selected vineyard: Typic Dystrudepts Pachic Humudepts. effect (rainfall, minimum maximum temperature) evaluated seasons 2008/2009, 2009/2010, 2010/2011. Soil physical chemical properties, soluble solids, titratable acidity pH wort determined, as well index total polyphenols, anthocyanin tannin contents grape. factors meteorological conditions (crop seasons) arranged 2x3 factorial. Except for polyphenol content, affect Sauvignon'. is more pronounced than type. Lower rainfall higher temperature ranges favor accumulation solids Higher favors increase wine acidity.
