摘要: Abstract High concentrations of 5-hydroxymethylfurfural (HMF) in honey provide an indication overheating under inappropriate storage conditions or aging. Conventional methods for determining HMF are cumbersome and require expensive equipment hazardous reagents. Hence the aim this study was to propose a new analytical tool determination honey, using low cost acoustic wave sensor. Volatile organic compounds (VOCs) samples were extracted, solid phase microextraction (SPME) technique, quantified, piezoelectric quartz crystal with gold electrodes coated layer decamolybdodivanado phosphoric acid, sensitive HMF. The reliability proposed method confirmed after comparing results quantification those obtained by conventional spectrophotometric White method, no statistical differences found (α = 0.05).
