摘要: The results of a survey bulk starter production in the United Kingdom are described. was concerned with systems, length and number cultures rotations. methods equipment used preparation, bacteriophage prevention measures, quality assurance procedures. Forty-three cheese factories England, Wales, Scotland, Northern Ireland were circulated, replies from 29 collated discussed.
