摘要: The use of mesophilic starter cultures, containing group N Streptococcus and Leuconostoc species, in the dairy industry is examined. Bacteriophage attack identified as main cause culture inhibition criteria used to select stable mixed-strain cultures phage-insensitive defined strains are established. key aspects propagation storage highlighted, well bulk-culture protection based on physical exclusion phage phage-inhibitory media. Developments application systems different countries examined show that significant process control elimination problems can be achieved.
