HPLC-DAD-ESI-MS/MS analysis and antioxidant activities of nonanthocyanin phenolics in mulberry (Morus alba L.).

摘要: Qualitative analysis of the nonanthocyanin phenolics from 2 mulberry cultivars, da-10 and hongguo, was performed by HPLC-DAD-ESI-MS/MS method. Six compounds were identified (procatechuic acid, chlorogenic 4-caffeolyquinic taxifolin, rutin, quercetin) 3 others (3,5-diCQA, taxifolin-hexoside, kamepferol-hexoside) tentatively identified. Quantification phenolic HPLC-DAD, which revealed that rutin (111.38 90.79 microg/g FW) major in cultivars. Phenolic acids cultivar (54.68 far more than hongguo (14.93 FW). CQA its isomers (40.02 acid da-10. The cultivars had higher antiradical activities superoxide anion DPPH radical antioxidant activity beta-CLAMS assay Trolox. These results relevant to not only control color stability organoleptic characteristics juice wine but also exploitation functional foods made mulberry.
