摘要: Winemaking as a form of food preseIVation is old civilization. Wine has been an integral component people's daily diet since its discovery and also played important role in the development society, reli­ gion, culture. We are currently drinking best wines ever produced. able to do this because our increased understanding grape growing, biochemistry microbiology fermentation, use ad­ vanced technology production, ability measure various major minor components that comprise fascinating beverage. Historically, winemakers succeeded with slow but gradual improvements brought about by combinations folklore, obseIVation, luck. How­ ever, they had monumental failures resulting necessity dis­ pose wine or convert it into distilled spirits vinegar. It was assumed even most marginally drinkable could be marketed.
