摘要: Two cowpea varieties (Ife-brown and Kano-white varieties) were used for the study. The effects of insect infestation on chemical composition physicochemical properties these seeds studied. proximate composition, mineral content, total starch, soluble sugars, bulk density, fat water absorption capacities, viscosity, gelation capacity emulsion infested compared with those uninfested cowpeas. Effects nitrogen solubility protein fractions also determined. Infestation depleted protein, starch sugar contents Oil capacities increased while emulsification, foam viscosity reduced. pattern was altered. Uninfested cowpeas (UKW) possessed better than Ife-brown (UFB). On other hand, UFB had emulsification UKW.
