摘要: Improvements in the production, manufacture, and/or storage of foods by both food industry and consumer have significantly diminished, but not eliminated, likelihood food-related illness product spoilage. Several highly publicized very costly outbreaks recalls due to contamination with pathogenic bacteria resulted greater awareness safety for consumers, producers, processors, regulators. In United States alone, borne is responsible about 9,000 deaths each year, yearly incidences ranging from 24 81 million cases costs $5 $25 billion. Europe, morbidity second only respiratory diseases, estimates 50,000 300,000 acute gastro-enteritis per population year. Coupled an enhanced safety, more interest research has also been directed toward developing alternatives antibiotics animal feeds, particularly throughout Europe. As alternative antibiotics, information contributions LAB health feed are subject much debate due, part, a paucity scientifically-controlled studies, studies evaluating their performance feeds. For these reasons, there remains critical need develop, implement, optimize strategies better control undesirable microbes pre-and post-harvest, as well animals targeted human consumption.
