摘要: Abstract The objective of this study was to investigate the process immobilization inulinases using natural montmorillonite as inorganic support. enzyme buffer ratio 3:10 and 10 min led highest specific activity, 375.07 U/mg protein. immobilized inulinase kept its activity after 1968 h under storage at low temperatures 456–1826 h high temperatures. pH value 3.5 activity. Km values 1.46 0.38 mM, vmax 0.2487 0.2396 mol/L min, were obtained, respectively, for sucrose inulin.
