摘要: Abstract The caffeoyl- and p-coumaroyl-tartrates which are the most abundant hydroxycinnamic derivatives in grapes, were found to be good substrates for grape phenol oxidases. Catecholase activity was inhibited by aromatic carboxylic acids, p-coumaric acid being strongest inhibitor.
