摘要: Publisher Summary This chapter discusses the most representative immunochemical technologies applied to food analyses. Immunoassays are for measurement of both single and multiple analytes. Chemical pesticides, polychlorinated biphenyls (PCBs), antibiotics typical examples contaminants that can be rapidly efficiently determined by antibody-based methods.
