摘要: Pure and mixed films of alpha- omega-gliadins were studied by tapping mode atomic force microscopy (AFM). The technique was sensitive to the chemistry surface properties films, allowing imaging gliadin phases at different ratios. In addition study micrometer level, higher resolution images allowed visualization protein molecular level. These studies may have relevance formation in developing bodies grain, where gliadins glutenins are deposited together. It has been assumed that consist a random network proteins; these indicate microphases could be present bodies. provides novel methods for studying biopolymer systems.
