摘要: Mycotoxins are toxic secondary metabolites of low molecular weight produced by filamentous fungi, such as Aspergillus, Fusarium, and Penicillium spp. natural contaminants agricultural commodities their prevalence may increase due to global warming. Dangerous mycotoxins cause a variety health problems not only for humans, but also animals. For instance, they possess carcinogenic, immunosuppressive, hepatotoxic, nephrotoxic, neurotoxic effects. Hence, various approaches have been used assess control mycotoxin contamination. Significant challenges still exist because the complex heterogeneous nature food composition. The potential combined omics metabolomics, genomics, transcriptomics, proteomics would contribute our understanding about pathogen fungal crosstalk well strengthen ability identify, isolate, characterise pre post-harvest. Multi-omics along with advanced analytical tools chemometrics provide complete annotation before/during contamination crops. We assessed merits these individual promising applications mitigate issue data included in this review focus on aflatoxin, ochratoxin, patulin be useful benchmark information future research.
