摘要: Provided is a preparation process of diglyceride-rich fat or oil, which includes bringing oil containing diglycerides in an amount 50 mass % greater and having transition metal content 5 ppm less into contact with steam while forming thin film the oil. This makes it possible to prepare reduced odor good color efficiently.
