摘要: Some of pathogenic and food spoilage bacteria can attach on contact surfaces form a biofilm, the source contamination foods. Biofilm is functional consortium microorganisms attached to surface embedded in extracellular polymeric substances (EPS) produced by microorganisms. Biofilms due special structure EPS are more resistant antimicrobial agents. Thus control biofilm formation processing important. Nisin peptidic bacteriocin that used for biocontrol formation. The aim present study was assess effect various concentration nisin Listeria monocytogenes, Staphylococcus aureus Salmonella enteritidis. reduction percent biofilms obtained using microtiter plate method ELISA reader machine. Also, bactericidal determined Triphenyl Tetrazolium Chloride. results indicated 4103 IU/ml effective S. enteritidis (87%) than L. monocytogenes (57%) Staph. (30%) with significant difference (P<0.05).
