Action of nisin and high pH on growth of Staphylococcus aureus and Salmonella sp. in pure culture and in the meat of land crab (Ucides cordatus)

摘要: O objetivo deste estudo foi avaliar o potencial de inibicao nisina e pH elevado em relacao a multiplicacao Staphylococcus aureus Salmonella sp. culturas puras inoculadas na carne caranguejo-uca. Em puras, S. fortemente inibida por nisina-EDTA (20 mM). A ate 8h incubacao, enquanto que durante todo experimento (24h). (tampao NaHCO3-NaOH, 10 11) mostrou-se efetivo da Nisina aplicados contaminada nao apresentaram mesmo efeito. mostrou eficiencia dos patogenos quando inoculados caranguejo, tampao demonstrou significante sobre Estes resultados sugerem apresenta um como agente antibacteriano, podendo ser util preservacao quimica caranguejo.
