Use of Metals and Anion Species with Chemometrics Tools for Classification of Unprocessed and Processed Coconut Waters

摘要: Coconut water is a natural isotonic, nutritive, and low-caloric drink. Preservation process necessary to increase its shelf life outside the fruit improve commercialization. However, influence of conservation processes, antioxidant addition, maturation time, soil where coconut cultivated on chemical composition has had few arguments studies. For these reasons, an evaluation waters (unprocessed processed) was carried out using Ca, Cu, Fe, K, Mg, Mn, Na, Zn, chloride, sulfate, phosphate, malate, ascorbate concentrations chemometric tools. The quantitative determinations were performed by electrothermal atomic absorption spectrometry, inductively coupled plasma optical emission capillary electrophoresis. results showed that Zn did not present significant alterations between samples. ranges PO43−, SO42− as follows: Cu (3.1–120 µg L−1), Fe (60–330 Mg (48–123 mg Mn (0.4–4.0 PO43− (55–212 (19–136 L−1). principal component analysis (PCA) hierarchical cluster (HCA) applied differentiate unprocessed processed Multivariated (PCA HCA) compared through one-way variance with Tukey–Kramer multiple comparisons test, p values less than 0.05 considered be significant.
