摘要: Bee pollen is produced by bees as a nutrient source in the hive. Its composition varies according to region where it and also with collection processing conditions. Proteins are main substances of this product; however, important micronutrients bioactive compounds present. Many studies have been conducted aim determining chemical bee pollen, results some these will be presented chapter. The contents proteins amino acids, lipids fatty vitamins, minerals phenolic samples collected different countries discussed, considering botanical origin other factors that influenced parameters.
