摘要: The aim of this study was to evaluate the influence washing water temperature and pressure on mesophilic psychrotrophic aerobic bacterial populations, yeasts molds, total coliforms fecal population, whereas cattle carcass surface may become contaminated during different slaughter procedures final reduce microbial population. Samples were taken by sponge swabbing in four areas (flank, neck, chest rump), from which 20 washed with at 25°C without artificial pressure, under a 3atm, 40°C 3atm. For control purpose using same method collect more carcasses samples washing,, totaling 100 samples. results showed that 3atm efficient remove microorganisms than heated , although latter promotes visible clean carcasses.
