摘要: ABSTRACT The effect of high pressure on thermal inactivation Bacillus stearothermophilus spores was investigated. time for the spore decrease from 106 to 102 spores/ml within 30min by heating at 110°C+200MPa, and 10min 100°C+400MPa. However, under pressurized conditions (at 400MPa), did not value below 10 2 even when they were heated 120°C 50min.
