Low-temperature transitions in fresh and osmotically dehydrated plant materials

摘要: Phase transitions in several plant materials were studied using differential scanning calorimetry (DSC) and small oscillatory amplitude rheology. The glass transition temperature of the unfrozen phase, recrystallization peak water, melting point ice, fresh as well samples osmotically dehydrated 15, 30, 45% sucrose solutions, identified both thermal mechanical analysis. Mechanical analysis showed that phase was approximately -45°C for at all concentrations. Thermal potato varied depending on amount freeze-concentration achieved.
