摘要: In the present work we aim to simulate unsteady two-dimensional evolution of moisture content, temperature and mechanical stress in a parallelepiped apple sample during convective drying. The model is based on heat mass transfer equations equilibrium equation under assumptions plane deformation, viscoelasticity isotropic hydric shrinkage. Finite Elements COMSOL Multiphysics solver used solve developed model. hydro-thermal was validated experimental data drawn our laboratory for internal profiles product. Excellent agreement has been obtained between numerical measured different drying temperatures. hydrothermal was, then, implemented Element Hydro-thermo-viscoelastic Results stresses are found be good with former observations.
