摘要: The cold storage of raw milk before heat treatment in dairy industry promotes the growth psychrotrophic microorganisms, which are known for their ability to produce heat-resistant proteolytic enzymes. Although Pseudomonas is described as main causative genus high spoilage potential products, Serratia liquefaciens secretes proteases and may be found samples well. However, at present there no information about S. after heat-treatment. aim this research was assess isolated from Brazilian characterize involved protease. shown secrete one metalloprotease of, approximately, 52 kDa encoded by ser2 gene. heat-resistance Ser2 similar aprX produced Pseudomonas. gene detected all isolates tested study, activity highly heterogeneous.
