摘要: The storage of fresh raw milk at low temperature does not prevent proliferation psychrotrophic bacteria that can produce heat-resistant proteolytic enzymes contributing to the reduced shelf life dairy products. This study aimed identify dominant enzyme-producing population from Brazil.
