Denaturation and aggregation of lysozyme in water-ethanol solution.

摘要: We have applied rheological methods for the analysis of ethanol-lysozyme interaction during process denaturation and aggregation protein. At low concentration ethanol a destruction hydration shell lysozyme is observed. With increase in structural transformation takes place. It leads to formation protein aggregate with an elongated structure. The characteristics lysozyme-water–ethanol solution changes from Newtonian pseudoplastic.
