Drying Characteristics of Pomegranate Arils Under Near Infrared-Vacuum Conditions

摘要: Modeling of pomegranate arils drying was carried out under thin layer near-infrared (NIR)-vacuum conditions. Drying the samples implemented at absolute pressures 2, 20, 40 and 60 kPa temperatures 60, 70, 80 90C. behavior as well effect conditions on moisture loss, effective diffusion, activation energy, shrinkage, color energy consumption, dried in NIR-vacuum dryer are discussed this study. Results showed that Aghbashlo model had supremacy prediction behavior. Effective diffusivity estimated ranges 3.07 × 10−10 to 1.14 × 10−9 m2/s. Activation were computed between 30.80 37.48 kJ/mol. Minimum shrinkage (71.46%) difference (16.7%) achieved temperature 60C pressure 2 kPa. Energy consumption 0.206 2.072 kWh. Practical Applications Combining NIR with vacuum condition can be a novel method arils. Advantages high mass transfer coefficients quality. radiation is absorbed by surface grain molecules directly penetrates into product. This phenomenon led rapid heating water inside material. Also, potentially useful technique improve quality nutritional value. Combination creates fast for thin-layer drying. Monitoring easily controlled aril characteristics measured easily. Pomegranate known medicinal plant. used medicine cure heart vascular disease, preventing cancers blood purification. The using preserved relatively long time save minerals vitamins.
