摘要: Transesterification and alcoholysis reactions catalyzed by immobilized lipases fromMucor miehei andHumicola lanuginosa in hexane gave fatty acid esters that did not reflect the expected 1,3-specificity of enzymes, due to competing acyl migrations partial glyceride products. However, both were 1,3-specific when diethyl ether was used as a solvent, this provided convenient analytical methodology combination with gas chromatography nuclear magnetic resonance spectroscopy for determination distribution within triglycerides.
