摘要: The detrimental effect of a low pH due to the accumulation lactate on cell growth and nisin production by Lactococcus lactis is well known. To avoid such an inhibitory enhance production, new strategy rerouting carbon flux was considered. This will be conducted in two ways: (i) ethanol, or (ii) alanine. confirm feasibility both compounds as targets reroute flux, their effects were investigated. For this purpose, mathematical model developed investigate during cultivation L. subsp. ATCC11454 with addition compounds. constructed then applied estimate optimum redirection ratio ethanol. described that ethanol 1.7 times higher than without flux. Investigation alanine also carried out result confirmed gave no significant production.
