摘要: Summary The oxidative degradation of Nα-t-Boc-Ne-fructoselysine (FL) and glycated protein in phosphate buffer solution have been investigated under physiological condition during long time incubation. FL was degraded to mainly lysine, carboxymethyllysine (CML) α-dicarbonyl sugars which contained glucosone, 3-deoxyglucosone (3-DG) 1-deoxy-2, 3-hexodiulose (1-DG). Glucosone a major sugar product corresponded lysine formation, 3-DG 1-DG were minors. Glycated bovine serum albumin (G-BSA) also like FL, glucosone main α-carbonyl compound.
