摘要: Abstract The removal of thorns for human cactus consumption can be performed by applying laser pulses to the areolas. This technique has proven advantageous increasing shelf-life product and reducing losses useful volume. work presents bromatological microbiological analysis nopal before after de-thorning an morphology irradiated area optical coherence tomography (OCT). action produced a dehydrated layer 1 mm below surface, which sealed thorn. A decrease in aerobic mesophiles, molds, yeasts, total coliforms was observed, indicating that process favorable quality this food product. No differences mineral composition irradiation were detected analysis.
