摘要: Abstract A total of 316 samples traditional milk and products (66 milk, 52 Ergo – naturally fermented 66 butter, buttermilk Ayib, Ethiopian cottage cheese); 20 cleaning water udder swabs were collected in the central highlands Ethiopia to assess occurrence distribution enteric bacteria. 534 isolates distributed among 10 genera species identified. Klebsiella, Escherichia Enterobacter dominant their order abundance with coli, most prevalent species. Erwinia, Klyuvera Providentia least abundant genera. Most genera/species identified isolated predominantly from followed by butter during dry season wet abundance. The overall mean aerobic mesophilic, coliform enterobacterial counts dairy 8.3, 4.5 5.2 log cfu mL−1 or g−1, respectively. had 0.7 more mesophilic count than samples. Coliform generally lower largest difference being 1.2 for 1 enterobacteria between highest lowest 3.9 g−1 cooperative centers smallholder producers, knowledge bacterial properties is essential improvement quality preservation thereby provide a wholesome product consumer minimum health risk.
