Determination of Glucose Distribution of Potato Tuber Using Blood Glucose Meter and Its Application to Estimate Processing Quality

摘要: In an effort to investigate special distribution of glucose content potato tuber a cultivar ‘Superior’ after harvest, whole was longitudinally cut into halves and cut-surface divided 11 regions. Approximate concentration each section determined using commercial blood meter. Higher level detected in the outer layers tissue than inner part although there were lower coefficients variation value, 37.4% 34.1% among individual tubers defined sections, respectively. A positive correlation between existed content, where central pith gave highest coefficient (r = 0.921) bud end did lowest 0.544). Glucose stored for 4 months at 2.0°C 5.5 fold higher compared kept ambient temperature. The chip color former much brighter those latter tubers. result obtained present study suggests that meter can be used rapid simple evaluation therein applied estimate processing quality during postharvest handling.
