摘要: This study was conducted to determine the optimum condition for extraction of chitosan by using response surface methodology (RSM). The extracted from cockle shell (Anadara granosa). optimized five levels and variables such as concentrations HCl (%), its immersion time (hr), concentration of  NaOH (N), deacetylation temperature ( o C) (hr). process involved three main steps which were, dimineralization, deproteination deacetylation.  A full factorial central composite design MINITAB software version 15 employed optimize yield chitosan. predicted at 8%  with  16.5 hours immersion, 2.6N,  61 C, 1.5 hours  time. determination coefficient R 2 = 95.4 also high, means experimental data acceptable.
