摘要: The polyphenols (some of them are also called phytoalexins, flavonols, flavanons, flavanonols, flavons, flavanols, and anthocyanines) usually marked as potent antioxidants or radical scavengers which assist the body cells against oxidation. Polyphenols in wine considered to explain so French paradox (long life aging low number coronary diseases despite high alcohol fat consumption). total polyphenolic content (TPC) antioxidant potential (TAP) were determined by photometry found strongly correlated. This finding suggests that determination TAP can be replaced a more simple procedure TPC determination. Capillary zone electrophoresis (CZE) with preconcentration solid phase extraction (SPE) was applied for some obtaining electropherograms SPE extracts (fingerprints). From mathematical evaluation fingerprints, prediction cultivars vintage using artificial neural networks (ANN) done than 90% correct prediction. study performed on set 47 samples young wines (vintage 1999-2002) from south Moravia (Czech Republic) New South Wales (Australia).
