摘要: Callus extracts of Crocus sativus exhibited the ability to transform all-trans-crocetin into its related glycosides between pH 7.0 and 7.6 in presence uridine-diphospho-glucose. The reactions involved step-wise addition a glucose moiety free carboxyl function 1-->6 glucosyl ester function. kinetics synthesis for each glycoside seemed indicate that two distinct transferases were implicated crocin, di-(beta-D-gentiobiosyl) ester.
