摘要: The present invention provides a soy protein hydrolysate with low content of glycinin wherein as major component in soybean is selectively decomposed and process for producing the same. obtained by allowing proteolytic enzyme to act on decompose protein, comprises at pH 1.0 2.8, preferably 1.5 2.5.
