摘要: Common bean (Phaseolus vulgaris L.) is a good source of protein, vitamins, minerals and complex carbohydrates. The objective was to compare protein profile, including anti-nutrient proteins, potential bioactive peptides improved common cultivars grown in Mexico Brazil. Bean isolates (BPI) were prepared from 15 hydrolyzed using pepsin/pancreatin. Thirteen proteins identified by SDS-PAGE in-gel tryptic-digestion-LC/MS. Protein profile similar among with high concentrations defense-related proteins. Major phaseolin, lectin, protease α-amylase inhibitors. Lectin (159.2 357.9 mg lectin/g BPI), Kunitz trypsin inhibitor (inh) (4.3 75.5 inh/g Bowman-Birk (5.4 14.3 μg trypsin-chymotrypsin BPI) activity (2.5 14.9 % inhibition relative acarbose/mg higher Mexican beans compared Brazilian beans. Abundant HPLC-MS/MS molecular masses ranging 300 1500 Da significant sequences SGAM, DSSG, LLAH, YVAT, EPTE KPKL. Potential bioactivities sequenced angiotensin converting enzyme (ACE), dipeptidyl peptidase IV (DPP-IV) antioxidant capacity. Peptides presented biological activities related control hypertension type-2 diabetes.
