Influence of growth conditions on production and activity of mesenterocin 5 by a strain of Leuconostoc mesenteroides

摘要: The effects of various parameters on production and activity mesenterocin 5, a bacteriocin produced by Leuconostoc mesenteroides subsp. UL5, were investigated. Titres minimum inhibitory concentration values determined critical dilution micromethod, using sensitive strain Listeria ivanovii as an indicator. Production the antimicrobial compound was optimal at 37 40°C after 9 h incubation, maximized in aerobic fermentor maintained pH 5.0. Tween 80 major factor increasing mesenteroxin 5 specific production. Large quantities could be obtained whey permeate supplemented with yeast extract presence surfactant (0.1%). Most strains tested including L. monocytogenes highly to range 5.5 6.0 temperature 20 25°C.
