摘要: Honey samples were collected from different floral and geographical origins. The total phenolic, flavonoid, carotenoid, antioxidant contents, FRAP/DPPH (ferric reducing power/1,1-diphenyl-2-picrylhydrazy) assays the color characteristics determined spectrophotometrically. honey exhibited high radical-scavenging activity (DPPH%) ranging 50.41 ± 0.8 to 70.5 ± 0.9%, FRAP 556.9 ± 15.0 1,340.2 ± 8.7 mM phenolic 79.4 ± 1.9 −232.7 ± 0.2 mg GAE/100 g. volatiles identified by means of solid phase microextraction–gas chromatography/mass spectrometry (SPME-GC/MS). Alcohols, aldehydes, acids, ketones, terpenes, phenols hydrocarbon represented most abundant compounds in honeys among 69 volatile components identified. Correlation between phytochemical assay parameters was found be statistically significant (P < 0.05). In addition, principal component analysis based on data GC-MS employed study obtain important classes that contributed differentiation analyzed. Remarkable variations observed phytochemical, botanical origins. Practical Applications Antioxidants are extensively used food industry avoid development toxic oxidation products extend shelf life. Because growing concern consumers about use artificial antioxidants, there has been a great interest identification natural antioxidants. present reveals studied promising source antioxidants might good management chronic diseases commonly associated with oxidative stress as well preservatives. Additionally, also using classified data. results demonstrated this method could for classification apiculture industry.
